Best during the dry season roughly from November to April but this is also the peak season. Shoulder season May and June is worth a try and less crowded. Showers may occur but easier to find nice private accommodations without booking in advance.
Hiking during the rainy season is not impossible but expect flooded trails. You may have to cross rivers on a high water level. Avoid the hurricane season from July to October and the school holiday from July to August.

Valle Vinales once covered by a mountain limestone range, but today much has eroded and left are the mogotes. Lots of the mogotes have caves, and some of these are developed for visitors. Cuba’s largest cave system is Santo Tomas and really worth a visit. Bring your own torch. Another one is Cueva del Indio which you enter by feet and leave by boat.
Vinales is popular for hiking, climbing, and caving. Climbing is tolerated but not officially allowed. Four guided hiking trails are offered at the information center to Vinales Valley. Attached is a picture of the different tracks. The guided hikes are reasonably priced, and afterwards, we enjoyed an offered fresh coconut in Valle Ancon. We did this hike in June during the rainy season, and it was really muddy. Vinales is famous for tobacco plantations and the best cigars in the world.
